The Dominican church of Notre-Dame du Rosaire has had an organ since 1962. It was designed after the Dominicans moved from St-Maximin to Toulouse at the end of the 1950s, and it was created by the organ-builder Pierre Chéron, assisted in designing a new type of instrument by P. P. Lacas, Michel Chapuis and René Saorgin among others. The organ was not completed until 1977 by the organ-builder Yves Sévère who, at the request of Xavier Darasse, respected the original design; Pierre Chéron himself provided the harmonisation.

In 2001, the organ was restored with great care and respect by Jean-Pierre Conan, assisted by Thierry Lemercier, who made certain additions that had long been considered necessary (expression box, combination action, etc.). "This great bird with wings unfurled” (Xavier Darasse) may not correspond to current standards for French or German Baroque organ music but it represents an important change in 20th Century organ-building, showing all the quality of non-industrial neo-classicism. It can be used for the earliest organ music and right through to the repertoire of the 20th Century. In addition, it beautifully matches the architecture of its setting, benefiting from the acoustics designed to bring out the singing of the choir of the Dominican Brothers.
